The objective of this work was to optimize the spray drying of pequi pulp using maltodextrin as carrier agent and Tween 80 as surfactant agent. A central composite rotatable design was used to evaluate the influence of inlet air temperature (140 to 200°C), maltodextrin (15 to 30%) and surfactant (0 to 5%) concentration on the process performance and physicochemical and nutritional properties of the dried powdered pulp. The dependent variables were process yield (27.4 - 51.7%), outlet air temperature (106.5 - 135°C), energetic efficiency (29.9 - 44.8%), moisture content (0.25 - 1.43%), water activity (0.09 to 0.21), hygroscopicity (9.1 - 12.1 g adsorbed moisture/100g dry matter), vitamin C content (129.8 - 303.0 mg/g solids pequi) and total carotenoids content (8.2 - 94.9 mg carotenoids/g solids pequi). The spray drying of pequi pulp was optimized for maximum vitamin C and total carotenoids content using response surface methodology, which were attained at 152°C, surfactant concentration of 1% and maltodextrin concentration of 18%. The characterization of the pequi pulp powder obtained at the optimized condition evaluating the particles sizes, bulk density and porosity. The morphology showed spherical and smooth particles with several sizes.

O objetivo deste trabalho foi avaliar a microencapsulação de polpa de pequi por spray drying. Um delineamento composto central rotacional foi utilizado para avaliar o efeito das variáveis independentes: temperatura do ar de entrada, concentração de surfactante e concentração de amido modificado sobre o rendimento do processo e as características do produto microencapsulado. A seleção da melhor condição de processo foi baseada na obtenção de um produto com maior teor de vitamina C e de carotenoides. Todos os pós produzidos mostraram teores de umidade inferiores a 2%. Os valores experimentais de higroscopicidade, rendimento de secagem, atividade de água, vitamina C e carotenoides totais dos pós variaram de 7,96 a 10,67 g de água adsorvida/ 100 g sólidos, 24,34 a 49,80%, 0,13 a 0,30, 145,78 a 292,11 mg de ácido ascórbico/g de sólidos de pequi e 15,51 a 123,42 mg de carotenoides/g de sólidos de pequi, respectivamente. Temperatura de ar de entrada de 140°C, concentração de surfactante de 2,5% e concentração de amido modificado de 22,5% foram recomendadas como sendo a condição selecionada. Através da microscopia eletrônica de varredura, observou-se que a maioria das partículas apresentou formato esférico e superfície lisa.

The aim of this study was to evaluate the microencapsulation of pequi pulp by spray drying. A central composite rotational design was used in order to evaluate the effect of the independent variables: inlet air temperature, surfactant concentration and modified starch concentration. The dependent variables were assumed as yield of the process and the product features microencapsulated. A selection of the best process condition was performed to obtain the best condition of a product with the highest vitamin C and carotenoids content. Powders showed moisture content below 2%. The experimental values of hygroscopicity, yield, water activity, total carotenoids and vitamin C powders ranged from 7.96 to 10.67 g of adsorbed water/100g of solids, 24.34 to 49.80%, 0.13 to 0.30, 145.78 to 292.11 mg of ascorbic acid/g of pequi solids and 15.51 to 123.42 mg of carotenoids/g of pequi solids, respectively. The inlet air temperature 140°C, the surfactant concentration of 2.5% and the modified starch concentration of 22.5% was recommended as the selected condition. By the scanning electron microscopy, it was observed that most of the particles had spherical shape and smooth surface.

The objective of this study was to obtain babassu coconut milk powder microencapsulated by spray drying process using gum Arabic as wall material. Coconut milk was extracted by babassu peeling, grinding (with two parts of water), and vacuum filtration. The milk was pasteurized at 85 ºC for 15 minutes and homogenized to break up the fat globules, rendering the milk a uniform consistency. A central composite rotatable design with a range of independent variables was used: inlet air temperature in the dryer (170-220 ºC) and gum Arabic concentration (10-20%, w/w) on the responses: moisture content (0.52-2.39%), hygroscopicity (6.98-9.86 g adsorbed water/100g solids), water activity (0.14-0.58), lipid oxidation (0.012-0.064 meq peroxide/kg oil), and process yield (20.33-30.19%). All variables influenced significantly the responses evaluated. Microencapsulation was optimized for maximum process yield and minimal lipid oxidation. The coconut milk powder obtained at optimum conditions was characterized in terms of morphology, particle size distribution, bulk and absolute density, porosity, and wettability.

O objetivo deste trabalho foi realizar a caracterização físico-química e microbiológica do surimi obtido de resíduos da filetagem de piramutaba. Os resultados da caracterização físico-química dos resíduos e surimi foram: umidade (76,37 e 79,11%), lipídios totais (5,35 e 0,74%), proteínas (14,92 e 10,79%), cinzas (3,03 e 2,35%), pH (6,9 e 7,4), valor calórico (109,15 e 77,86 kcal.g-1) e atividade de água (ambos 0,98), respectivamente. Os resultados dos valores de bases voláteis totais foi de 7,29 mgN/100-1 g (resíduos) e carboidratos de 7,01% (surimi). Os valores de lipídios totais e proteínas foram reduzidos durante o preparo do surimi, provavelmente, devido a sucessivas lavagens durante o processamento. Os resíduos e o surimi foram analisados microbiologicamente estando em conformidade com os parâmetros exigidos. Os resultados mostraram que houve uma perda da cor vermelha (parâmetro a*) e amarela (parâmetro b*). Por outro lado, o parâmetro L* (luminosidade) aumentou após o processamento do surimi. Conclui-se que os resíduos de piramutaba podem ser empregados como matéria-prima de qualidade na elaboração de surimi e como fonte de nutrientes para a alimentação humana, constituindo-se também como uma alternativa para destino dos resíduos, antes lançados no ambiente.

The aim of this work was to perform the microbiological and physicochemical characterization of surimi made from waste of piramutaba filleting. The results of physicochemical characterization of the waste and surimi were: moisture (76.37 and 79.11%), total lipids (5.35 and 0.74%), proteins (14.92 and 10.79%), ash (3.03 and 2.35%), pH (6.9 and 7.4), caloric value (109.15 and 77.86 kcal.g-1), and water activity (both 0.98), respectively. The results of the levels of total volatile bases were 7.29 mgN/100-1 g (waste) and 7.01% carbohydrate (surimi). The values of total lipids and proteins were reduced during the preparation of surimi, probably due to successive washes during the processing. Waste and surimi were examined microbiologically and are in compliance with required parameters. The results show a loss of red (a* parameter) and yellow (b* parameter) color. On the other hand, the L* parameter (lightness) increased after the processing of surimi. It can be concluded that piramutaba waste can be used for surimi preparation and as a source of nutrients for human consumption, providing an alternative use of these wastes avoiding their disposal polluting the environment.

O objetivo deste trabalho foi avaliar sensorialmente o mapará in natura e com pré-tratamento osmótico antes da secagem. Para o teste de aceitabilidade do bolinho de músculo de mapará, foram utilizados peixes in natura e desidratados osmoticamente, nas melhores condições de processo, em soluções de NaCl, NaCl + sacarose e em solução de NaCl + xarope de milho e secos. Foram utilizados 25 provadores não treinados, de ambos os sexos, com idade variando de 20 a 60 anos. Os atributos sensoriais avaliados foram aparência, aroma, sabor, textura e impressão global. O aroma e a textura das amostras com e sem pré-tratamento osmótico foram os atributos que obtiveram maior aceitação por parte dos consumidores. Pôde-se concluir que as amostras tratadas com soluções osmóticas, com exceção das tratadas com solução de NaCl + xarope de milho, proporcionaram produtos com textura, sabor e aroma mais agradáveis.

The objective of this work was the sensorial evaluation of mapará meat, in natura and without osmotic pre-treatment before drying. For the acceptability test of the mapará fish muscle bisquit, the in natura fish samples were used and dried under optimum osmotic dehydration conditions, in solutions of NaCl, NaCl + sucrose and in solution of NaCl + corn syrup solution before drying. 25 not trained testers were used, of both sex, ages ranging from 20 to 60 years. The evaluated sensorial attributes of the samples were appearance, aroma, flavor, texture and overall impression. The aroma and texture of the samples with and without osmotic pre-treatment were the ones most widely accepted by the consumers. It is concluded that the samples treated with osmotic solutions, with the exception of those processed with NaCl + corn syrup solution, provided products with better texture, flavor and a more pleasant aroma.

As características físicas e físico-químicas do mirtilo (Vaccinium myrtillus) produzido no Brasil foram analisadas. As propriedades reológicas foram medidas em 5, 25, 45 e 65 °C, em um reômetro de tensão controlada equipado com geometria rugosa de placas paralelas com taxa de deformação variando de 0-300 s-1 com o objetivo de verificação da influência da temperatura no comportamento do fluido. O comportamento pseudoplástico com tensão residual foi bem descrito pelos modelos de Ostwald-de-Waele (Lei da Potência), Herschel-Bulkley (HB) e Mizhari Berk. A tensão residual diminuiu com o aumento da temperatura para 5, 25 e 45 °C, enquanto que para 65 °C os efeitos foram contrários, exibindo elevados valores. A viscosidade diminuiu com o aumento da temperatura e a equação de Arrhenius apresentou uma boa descrição do efeito da temperatura na viscosidade aparente do mirtilo, e a energia de ativação (Ea) determinada para uma taxa de deformação de 100 s-1 foi 9,36 kJ.mol-1.

The physical and physicochemical characteristics of blueberry (Vaccinium myrtillus) fruits produced in Brazil were analyzed. Rheological properties were measured at 5, 25, 45 and 65 °C, on a stress controlled rheometer equipped with grooved a stainless-steel parallel-plate in a shear rate range of 0-300 s-1, with the objective of determining the influence of temperature on the rheological properties. The pseudoplastic behavior with yield stress was well described by the Ostwald-de-Waele (Power Law), Herschel-Bulkley (HB) and Mizhari Berk models. The yield stress and behavior index decreased with the increase in the temperatures for 5, 25, and 45 °C whereas for the temperature of 65 °C the effects were the opposite exhibiting elevated values. The viscosity decreased with an increase in temperature, and the Arrhenius equation described adequately the effect of temperature on the apparent viscosity of the puree, in which the activation energy (Ea) determined at a shear rate of 100 s-1 was 9.36 kJ.mol-1.

A influência da temperatura, pH e razão enzima:substrato na cinética de hidrólise enzimática de carne de frango utilizando a protease Alcalase® 2,4 L foi avaliada neste trabalho. Os experimentos foram conduzidos à temperatura de 43 a 77 °C, razão enzima:substrato de 0,8 a 4,2% p/p e pH de 7,16 a 8,84, de acordo com um planejamento experimental completo, totalizando 17 ensaios. A reação foi monitorada, utilizando-se o método pH-stat para obtenção dos graus de hidrólise em função do tempo de processo. As curvas de hidrólise obtidas apresentaram uma alta taxa inicial de reação, seguida da sua diminuição até alcançar uma fase estacionária. Os resultados experimentais da cinética de reação foram ajustados a um modelo empírico, que consiste na variação do grau de hidrólise em função do logaritmo neperiano do tempo. Esse modelo apresentou um bom ajuste, com coeficientes de determinação superior a 0,96 e desvio relativo médio inferior a 10%. Os parâmetros do modelo foram avaliados através de um planejamento experimental, de modo a verificar a influência das variáveis de reação sobre eles. O aumento da razão enzima:substrato e da temperatura acarretou maiores valores do parâmetro a. O parâmetro b não sofreu influência da variável razão enzima:substrato e o seu valor aumentou com o aumento da temperatura. A variável pH afetou significativamente os parâmetros estudados.

The hydrolysis of chicken breast meat by commercial protease Alcalase® 2.4 L was studied in order to evaluate the temperature, renzyme:substrate ratio, and pH influence on enzymatic hydrolysis kinetics. The tests were carried out under different conditions with respect to temperature (43-77 °C), enzyme:substrate ratio (0.8-4.2% w/w, g enzyme/100 g protein), and pH (7.16-8.84) according to factorial 2³ experimental design with the total of 17 tests. The reaction was monitored by the pH-stat method to obtain the degree of hydrolysis values at different intervals of time. The hydrolysis curves were characterized by high initial reaction rates followed by decreases in the reaction rate up to the stationary phase. The results were fitted an exponential model that presented a good fit with high determination coefficient and low average relative error. The variables influence on model parameters was observed by experimental design. An increase in the enzyme:substrate ratio and temperature led to higher parameter a values. The parameter b was not affected by the enzyme:substrate ratio and its value increased with higher temperature. The variable pH affected significantly the parameters a and b.

A prensagem mecânica contínua de oleaginosas se destaca por sua rapidez, facilidade de manuseio e baixo custo de instalação e manutenção adequando-se perfeitamente à realidade das pequenas comunidades rurais; quanto à eficiência, a extração por solvente ainda é melhor. Para melhorar o desempenho, pesquisadores observaram a influência de variáveis no rendimento em óleo, como o teor de umidade e temperatura dos grãos e aspectos construtivos da prensa. Quanto ao preparo inicial da matéria-prima, estudos mostram que existe uma faixa ótima de teor de umidade, além de valores de temperatura que possam facilitar ou prejudicar a fluidez do óleo. Avaliou-se, no presente trabalho, a influência da temperatura e do teor de umidade dos grãos de girassol no rendimento em óleo bruto obtido pela extração mecânica. Para a faixa de trabalho escolhida a umidade e a interação umidade x temperatura foram significativos afetando, de forma negativa, o rendimento para um nível de confiança de 95%. O maior rendimento em óleo bruto foi para umidade na faixa de 8 a 8,5% e temperatura entre 47,8 a 60 ºC. O óleo bruto apresentou características semelhantes as do óleo de girassol comercial obtido via extração por solvente.

The continuous screw pressing of oilseeds is noted for its speed, case of handling and for its low cost installation and support, adapting perfectly to small agricultural communities. However, in terms of efficiency, the traditional solvent extraction still has a higher yield. Attempting to improve the screw pressing technique, some researchers had observed that some variables had an influence on oil yield, such as grain moisture content, grain temperature and some construction aspects of the press. In relation to the initial raw material preparation, studies reveal the possibility of finding optimal values of the moisture content and temperature. In this work, the influence of temperature and moisture content on oil yield was evaluated. For the experimental range of values chosen, among the effects studied, the moisture content and the interaction between moisture and temperature were significant, affecting in a negative way the oil yield, to 95% of confidence. The biggest value of oil yield was reached with the moisture content between 8 to 8.5% and the temperatures between 47.8 to 60 ºC. The oil obtained by pressing presented characteristics similar to those of commercial sunflower oil.

A prensagem contínua de grãos oleaginosos é um método rápido, fácil e de baixo custo para a obtenção de óleos, sendo uma alternativa viável para pequenas comunidades de agricultores. A eficiência deste método é bem inferior àquela conseguida pelo tradicional método de extração por solvente, sendo afetada diretamente pelas condições iniciais dos grãos, como o teor de umidade e temperatura, e por aspectos construtivos da prensa, como dimensionamento do seu eixo e da gaiola. No presente trabalho, avaliou-se por meio de um planejamento experimental, aliado à metodologia de superfície de resposta, a influência da temperatura e do teor de umidade dos grãos de amendoim no rendimento em óleo bruto. As faixas avaliadas foram entre 8 e 10% para o teor de umidade e entre 25 e 60 °C para a temperatura. Os óleos brutos obtidos foram caracterizados conforme metodologia oficial da AOCS. As duas variáveis estudadas foram significativas para o nível de confiança adotado (95%), sendo as condições ótimas localizadas próximas aos maiores valores de temperatura e teor de umidade dos grãos. A faixa de temperatura de 50 a 65 °C e o teor de umidade de 10 a 10,8% correspondem a rendimentos máximos.

The continuous oilseed expeller is a quick, easy, and low cost method to obtain oils, so it is used in small agriculture communities. This method is less efficient than the traditional solvent extraction, since it is affected directly by the initial conditions of the raw material, such as grain moisture temperature, and also by some machine features, such as the shaft and barrel design. In this work, the influence of the temperature and moisture content of peanut grains on the yield of gross oil was evaluated by experimental design and response surface methodology. The studied temperature range was between 8 and 10%, and the moisture content range was between 25 and 60 °C. The unrefined oil obtained was analyzed by the AOCS official method. The two studied variables were significant at 95% level, and the optimal condition values were close to the highest values of temperature and moisture content of grains. The temperature range from 50 to 65 °C and the moisture content from 10 to 10.8% correspond to the maximum oil yields.

O objetivo deste trabalho foi avaliar a desidratação osmótica da batata-doce (Ipomoea batatas) utilizando soluções hipertônicas de sacarose e/ou NaCl, em três concentrações diferentes a 40 °C. As perdas de água mais elevadas foram obtidas quando se utilizou a mistura de sacarose e NaCl. A adição do NaCl às soluções osmóticas aumenta a força motriz do processo. Verifica-se que o processo de desidratação osmótica é principalmente influenciado pela mudança da concentração de NaCl, mas o efeito positivo da interação do sal com a sacarose também determinou a diminuição do ganho de sólidos quando os solutos estavam em concentrações máximas. As cinéticas de transferência de massa foram modeladas de acordo com as Equações de Peleg, de Fick e de Page, e apresentaram bons ajustes aos dados experimentais. A Equação de Peleg e o modelo da Page apresentaram os melhores ajustes e mostraram uma excelente capacidade de predição para dados de ganho de sólidos e de perda de água. A difusividade efetiva foi determinada utilizando-se a Segunda Lei de Fick aplicada à geometria de placa plana, encontrando valores de 3,82 x 10-11 a 7,46 x 10-11 m²/s para a perda de água, e de 1,18 x 10-10 a 3,38 x 10-11 m²/s para o ganho de sólidos.

The aim of this work was to evaluate the osmotic dehydration of sweet potato (Ipomoea batatas) using hypertonic sucrose solutions, with or without NaCl, at three different concentrations, at 40 °C. Highest water losses were obtained when the mixture of sucrose and NaCl was used. The addition of NaCl to osmotic solutions increases the driving force of the process and it is verified that the osmotic dehydration process is mainly influenced by changes in NaCl concentration, but the positive effect of the salt-sucrose interaction on soluble solids also determined the decrease of solid gain when solutes were at maximum concentrations. Mass transfer kinetics were modeled according to Peleg, Fick and Page's equations, which presented good fittings of the experimental data. Peleg's equation and Page's model presented the best fitting and showed excellent predictive capacity for water loss and salt gain data. The effective diffusivity determined using Fick's Second Law applied to slice geometry was found to be in the range from 3.82 x 10-11 to 7.46 x 10-11 m²/s for water loss and from 1.18 x 10-10 to 3.38 x 10-11 m²/s for solid gain.

A desidratação osmótica de filés de mapará tem sido utilizada como pré-tratamento antes da secagem e refrigeração de alimentos como um meio de reduzir a umidade dos produtos. O objetivo do trabalho foi otimizar a transferência de massa ocorrida durante a desidratação osmótica de mapará através da metodologia de superfície de resposta. A desidratação osmótica foi realizada de acordo com um planejamento fatorial completo 2³, com oito pontos fatoriais, três centrais e seis axiais, totalizando 17 ensaios, em que o valor das variáveis dependentes, a perda de peso (PP), a perda de água (PA), o ganho de sólidos (GS), GS/PA e ácido tiobarbitúrico (TBA), são funções das variáveis independentes, temperatura, concentração de NaCl e tempo de imersão. A análise estatística aplicada aos dados experimentais foi realizada através do erro puro e pelo SS residual. Aplicando a metodologia de superfície de resposta, a condição ótima de convergência de menor perda de peso, maior perda de água e menor ganho de sal correspondeu a uma concentração de cloreto de sódio de 22%, temperatura de 46 °C e tempo de 7 horas.

Osmotic dehydration of mapará fillets has been used as a pre-treatment before dehydration and refrigeration of food as a means of reducing product moisture content. The aim of this study was to optimize mass transfer occurring during osmotic dehydration of mapará using the response surface methodology. Osmotic dehydration was carried out following a 2³ complete factorial design, with eight factorial, three central and six axial points, totalizing 17 assays, where the values of the dependent variables, weight loss (PP), water loss (PA), solid gain (GS), GS/PA and tiobarbituric acid (TBA), are a function of the independent variables, temperature, concentration of NaCl and immersion time. The statistic analysis, applied to the experimental data was carried out using the pure error and the residual SS. Applying the response surface methodology, the best condition of convergence of lower weight loss, greater water loss and lower salt gain corresponded to a sodium chloride concentration of 22%, temperature of 46 °C and time of 7 hours.

A aplicação da inulina nas indústrias de alimentos e farmacêuticas está associada à possibilidade de substituição do açúcar e da gordura, com baixa contribuição calórica, e na formulação de medicamentos e alimentos funcionais, pois atua no organismo de maneira similar às fibras dietéticas. A comercialização da inulina é feita preferencialmente com o produto em pó, devido à maior facilidade no transporte, embalagem e manuseio. Dessa forma, é de grande importância conhecer o comportamento do produto quando armazenado sob diferentes condições de umidade relativa. O objetivo desse trabalho foi o de avaliar a influência da umidade sobre a microestrutura da inulina em pó, obtida a partir da secagem por atomização de um concentrado de inulina extraído de raízes de chicória. A análise da estrutura do material em microscópio eletrônico de varredura demonstrou a sua elevada higroscopicidade. Em ambientes com atividade de água (a w) superior a 0,3085, a inulina sofreu alterações em sua microestrutura que comprometeram a sua qualidade. Ao ser armazenada em ambiente com a w = 0,5285, o material perdeu suas características de pó, devido à aglomeração de partículas associada à absorção de umidade, e se transformou em uma massa sólida. Essa característica foi agravada com o aumento da umidade relativa do ambiente.

The application of inulin in food and pharmaceutical industries is associated to the possibility of substituting sugar or fat, with a low caloric contribution, and of formulating medicine and functional foods, as it acts in the human organism in a similar way to dietary fibers. Inulin is mostly commercialized as a powder, which provides easier manipulation, transportation, storage and consumption. Thus, it is of great importance to know the behavior of inulin powder when stored under different relative humidity conditions. The objective of this work was to evaluate the influence of moisture on the microstructure of inulin powder, obtained from spray drying an inulin concentrate extract from chicory roots. The analysis of the structure of the material in a scanning electron microscope demonstrated its high higroscopicity. In environments with water activity (a w) higher than 0.3085, inulin presented alterations in its microstructure that compromised its quality. When inulin was stored in an environment with a w = 0.5285, the material lost its powder characteristics, due to particle agglomeration associated to moisture absorption, and it turned into a solid mass. This characteristic was aggravated with the increase of the relative humidity of the environment.

Foram determinados o rendimento do filé e a composição físico-química da tilápia quanto ao teor de umidade, proteína, cinza, lipídeos e atividade de água. Para as análises, foram utilizados 19 exemplares de tilápia com peso médio e comprimento de 989,6 g e 38,9 cm, respectivamente. Os peixes foram pesados, medidos (comprimento, largura e espessura) e após a filetagem calculou-se o rendimento. Foi realizada a determinação da composição físico-química, que apresentou teores de: 77,13% de umidade; 2,60% lipídios; 19,30% proteína; 1,09% cinza; e atividade de água de 0,983. As relações de peso filé/peixe e peixe/resíduo apresentaram boas correlações lineares. Foi realizada também a análise microbiológica do peixe in natura; a matéria-prima estava dentro dos limites exigidos pela legislação brasileira, portanto apta para o processamento e/ou consumo.

The fillet yield of Thai-style tilapia and its physicochemical composition, including moisture content, protein, ash lipids and water activity, were determined. The analysis involved 19 specimens of tilapia with average weight and length of 989.6 g and 38.9 cm, respectively. The fish were weighed, measured (length, width and thickness), filleted, and the yield was calculated. The chemical composition presented the following contents: 77.13% moisture, 2.60% lipids, 19.30% protein, 1.09% ash, and 0.983 water activity. The fillet/fish to fish/residue weight ratios presented good linear correlations. The raw fish was also subjected to a microbiological analysis, which indicated that it met the safety limits established by Brazilian legislation and was therefore safe for processing and consumption.

O presente trabalho teve como objetivo estudar as propriedades reológicas, de cor e a cinética do processo de desidratação osmótica, a pulso de vácuo, de fatias de manga. As fatias de manga foram imersas em soluções hipertônicas de sacarose, nas concentrações de 45, 55 e 65 ºBrix com temperatura controlada (20 e 30 ºC). No início do processo, aplicou-se ou não um pulso de vácuo, utilizando as pressões de 50 e 100 mbar por 10 minutos. As frutas foram desidratadas por 5 horas, sendo avaliadas em diferentes tempos em relação à perda de peso, perda de água, ganho de sólidos, a w, cor e propriedades reológicas (tensão e deformação na ruptura). O aumento da concentração e da temperatura da solução causou um aumento na perda de peso e de água enquanto que a incorporação de solutos foi favorecida em baixas concentrações e altas temperaturas e com a aplicação do pulso de vácuo. O amaciamento do produto, caracterizado pela diminuição da tensão máxima de ruptura, e o aumento da deformação na ruptura da amostra ocorreram nas condições de maior incorporação de solutos. Não houve alteração dos parâmetros de cor das mangas durante o processo de desidratação.

The aim of this work was to study rheological and colour properties and process kinetics of mango slices subject to pulsed vacuum osmotic dehydration. The slices were immersed in osmotic sucrose solutions (45, 55 and 65 ºBrix) at 20 or 30 ºC. At the beginning, a sub-atmospheric pressure was applied or not to the solid-liquid system (50 or 100 mbar of pressure) for 10 minutes followed by an atmospheric pressure operation up to 5 hours. Fruit samples were evaluated after pre-determined times in terms of weight loss, water loss, solids gain, a w, colour and rheological properties (stress and strain at rupture). The concentration and temperature increases lead to a weight and water reduction. Solid gain was favoured by lower concentration and a higher temperature and by the pulsed vacuum application. The sample softening, which is characterized by a reduction of maximum stress at rupture, and the increased stress on strain at rupture ocurred at the great solids updake conditions. The colour parameters did not change during the dehydration process.

Aplicações da vibração mecânica com o intuito de facilitar a fluidização e aumentar as transferências de calor, massa e quantidade de movimento são processos comumente utilizados nas agroindústrias, que atualmente encontram suas aplicações no processamento de partículas difíceis de fluidizar. Equações e dados experimentais encontrados na literatura das características aerodinâmicas de leitos vibrofluidizados são apresentados e discutidos, ressaltando o efeito da vibração no leito.

Application of mechanical vibration to aid fluidization and to improve heat, mass and momentum transfer are usual processes in agricultural industry and it has found nowadays extensive applications in particle processing of materials difficult-to-fluidized. Equations and experimental data found in literature for the aerodynamics characteristics of vibro-fluidized beds are presented and discussed, emphasizing the vibration effect in the bed.
